Ingredients:
6 eggs
3 cups of milk
1/4 tsp nutmeg
1/4 tsp white pepper
1/4 tsp salt
1 14-ounce can of artichoke hearts, chopped into small pieces
1 cup of spinach, finely chopped
1 cup of parmesan cheese, freshly grated
2 pre-baked 8-inch pie shells
Instructions:
- Pre-heat your oven to 375 degress.
- Mix the eggs, milk, nutmeg, white pepper and salt together in a medium bowl.
- Place the spinach, artichoke hearts, and parmesan cheese into the pie shells.
- Pour the mixture from your bowl evenly between the two pie shells.
- Place the quiches in the oven and bake for 45 minutes to one hour until the custard is set and a toothpick inserted comes out clean.
Note: If you use processed Parmesan cheese, use less salt in the custard mix. If you use frozen spinach, squeeze out the water after defrosting.
